Coconut Flour Waffles (from "The Food Lovers - Make it Paleo")
Ingredients:
Toppings:
- Strawberry sauce (strawberries, 1 TBSP water, 1 tsp arrow root and a dash of agave or maple syrup)
- Fresh fruit, toasted walnuts, Greek yogurt (with 1 tsp of vanilla)
- In a medium-sized mixing bowl, blend all ingredients with a hand mixer.
- Heat waffle iron to “waffle” setting—typically medium-high heat.
- Drop batter into center of waffle iron to cover about 3/4 of area.*This batter does not expand the way traditional flour waffles do
- Waffles are done when they easily separate from the waffle iron, about 3–5 minutes.

My daughter makes these all the time for her children. She makes a double batch (adding blueberries) and freezes them for quick breakfasts for the kids. Delish and so healthy!
