Coconut Flour Waffles

For Christmas this year Scott got me an amazing Paleo Cookbook called "The Food Lovers - Make it Paleo".  On Christmas morning we made the Coconut Flour Waffles and they were AMAZING.  We made them at least 3 times over the holidays.  They are very easy, satisfying and are a great brunch idea!   


Coconut Flour Waffles (from "The Food Lovers - Make it Paleo")
Ingredients:
  • 1/4 cup Coconut Flour
  • 1/4 tsp Baking Soda
  • 1/4 tsp Ground Nutmeg
  • 1 Tbsp Ground Cinnamon
  • 1 Tbsp Coconut Milk (or regular milk)
  • 4 eggs

  • Toppings:
    - Strawberry sauce (strawberries, 1 TBSP water, 1 tsp arrow root and a dash of agave or maple syrup)
    - Fresh fruit, toasted walnuts, Greek yogurt (with 1 tsp of vanilla) 


    Steps:
    1. In a medium-sized mixing bowl, blend all ingredients with a hand mixer.
    2. Heat waffle iron to “waffle” setting—typically medium-high heat.
    3. Drop batter into center of waffle iron to cover about 3/4 of area.*This batter does not expand the way traditional flour waffles do
    4. Waffles are done when they easily separate from the waffle iron, about 3–5 minutes.

    MMMMmmmm here they are fresh off the waffle maker!


    Try adding toppings like homemade strawberry sauce (in previous post), toasted walnuts, Greek yogurt with vanilla or fresh fruit.

    1. My daughter makes these all the time for her children. She makes a double batch (adding blueberries) and freezes them for quick breakfasts for the kids. Delish and so healthy!
