Banana Dark Chocolate Grain Free Cookie Bites


This is a guest post from my trip recent trip to Vancouver.  My best friend Nicole has moved in August for work and I miss her dearly.  When living in Victoria we called each other "wife" as we love supporting each other, spending time together and making food together.  I'm known for my grain free cooking creations and Nicole is famous for her grain free baking!  She had a new recipe she wanted to have me taste....glady!  It's an easy recipe with very few ingredients and they are a perfect snack, breakfast food or treat with tea. 

Ingredients:
2 bananas
2 egg
1/4 tsp baking soda
1/2 cup coconut flour
1/2 cup dark chocolate chopped (70% is best)
1/2 tsp vanilla
pinch of salt
unsweetened coconut (garnish)


Mash bananas and eggs. Add coconut flour and baking soda and stir in wet mixture. Add 1/2 cup dark chocolate and stir until it's all mixed in.

Roll into 1 inch balls, squash top with a fork and garnish with coconut. Cook at 350 degrees for 20minutes (until golden brown)


Enjoy while warm or cook and pack up in a zip lock for a snack later!


 Mmmmm fresh out of the oven and perfect with a cup of tea!
