Healthy Zucchini Fritters with Chipotle dipping sauce


YUMMMM!!!!  These healthy fritters are packed with protein and vegetable, and make an excellent snack!   I store them in Tupperware and take them on the run  cold for a snack or used them last weekend for the Base of Eggs Benny!  Give them a try and add whatever spices you desire!! 

 
Healthy Zucchini Fritters
with Chipotle dipping sauce

Ingredients:
- 2 zucchinis
- 2 eggs
- 1 small onion
- 1 tsp ground flax
- 1 tsp coconut flour
- Spices (salt, pepper, cayenne, cumin, Italian.. whatever you like!)
- 1 TBSP oil

Chipotle dipping sauce:
- 2 TBSP 0% Greek yogurt
- dash of chipotle powder (or puree from a can)
*If you don't have chipotle.. try Cayenne, or curry powder!

- Grate Zucchinis and onion in Food processor (or by hand with a cheese grater).  Add eggs, flax, coconut flour and spices and herbs.  Mix together.
Make into balls and squeeze access liquid. Makes approx 12 fritters.

Heat oil in a pan on medium and add fritters (should sizzle.)  Adjust temperature so the fritters turn golden but do not burn.  Approximately 5 minutes per side.


Remove cooked Fritters and place on a plate in the oven to keep warm.  These make an excellent side dish, base for eggs Benny, or morning snack!
