After a trip to Costa Rica this March I was inspired to make licuados (blended fruit drinks). In the summer I always find a whole watermelon is a lot to eat and sometimes I find myself looking for things to do with it. So on a rare hot west coast day I came up with this recipe which is one of my favourite thirst quenchers when I want to cool down and relax.
Watermelon, lime Licuado - 1 serving
- 1 cup watermelon
- 1-2 limes squeezed
- 1/2 cup ice
Or
- 1 cup frozen watermelon
- 1-2 limes squeezed
- 1/2 cup cold water
There are two methods for this recipe that I use. Sometimes I freeze the watermelon because I don't have space for it in my fridge but you can also make it with fresh watermelon. I really like mine with a lot of lime flavor but add as much or little fresh squashed lime as desired.
Directions:
Place watermelon, lime juice and ice (or water) in blender (or a tall container and use a hand blender). Pulse until all watermelon chunks are gone. Add a few ice cubes and enjoy!
