These Grain Free Waffles came to light when I found a sweet heart shaped waffle iron at Value Village for $2.99 the week before Valentines Day.... SCORE! They became a favourite this winter and on this particular day we enjoyed them while watching the Olympics. I usually post original recipes but I tried this recipe online after my attempt was an epic fail. These were light and fluffy and a huge hit in our house. Makes approx. 4 servingsIngredients:
- 3 egg yolks
- 3 egg whites, room temperature
-1/4 cup coconut milk or milk
- 1 cup almond flour
- ¼ teaspoon salt
- 1 teaspoon vanilla if sweet
- 1 teaspoon maple syrup if sweet
- 2 tablespoons coconut oil or unsalted butter, melted
- bacon grease or butter for waffle iron
Strawberry Sauce:
- 1 cup frozen or fresh strawberries
- 1tbs water
- 1/2 tsp arrowroot
- 1tbs honey (optional)
Directions:
Step #1 Preheat waffle iron.
Step #2 In a medium bowl, whisk egg yolks and milk.
Step #3 Add almond flour and salt. Combine until smooth
Step #4 Add melted coconut oil or butter and vanilla and mix until smooth
Step #5 Whisk egg whites until they form moist, stiff peaks.
Step #6 Fold about ¼ of egg whites into batter. Fold batter into remaining egg whites in three parts.
Step #7 Scoop 1/3 cup of batter onto a preheated and greased waffle iron. Do not smooth the top of the batter before closing the top of the iron. Close the lid gently. Cook until golden brown.
Strawberry Sauce: Add water, strawberries and honey (optional) to a pot. Stir over medium heat until strawberries soften. You can either use a masher or hand blender to puree strawberries and add arrowroot powder and blend until smooth. Cook on a low simmer and whisk until it thickens (approx 5 mins). Turn off heat and serve warm over waffles.
