I had my Grandma and Aunt and Uncle over for dinner this summer, and since I have inherited my grandma's BBQ I wanted to do a healthy twist on burgers. I have NEVER made burgers before on my own so this was an exciting challenge for me. I usually have some in my freezer for a quick and easier dinner, using lettuce instead of a bun. A perfect meal for summertime!
Sundried Tomato, Thyme and Mozzarella Burgers (4):
1 lb (454 g) lean ground beef
1/4 cup quinoa flakes (or oats)
I cup shredded Mozzarella cheese
1 egg
1 Tbsp. ground flax
Handful of sun dried tomatoes (chopped)
Thyme (chopped)
Salt and pepper (to taste)
Toppings:
Avocado
Red Onion
Pickles
Tomato
Arugula or spinach
Lettuce (large leaves for wrapping the burger)
Step# 1: Add all burger ingredients to a large bowl and mix together (lean ground beef, quinoa flakes, shredded Mozzarella cheese, 1 egg, ground flax, sundried tomatoes, Thyme, and pepper).
Step #2: Make 4 round balls of the mixture and place on parchment paper
Step#3 Flatten into patties and cover with plastic wrap (these can be made in advance so it's easy for when you are ready to grill. It also gives the mixture a chance to set.)
Step#4 Place patties on seasoned grill (clean & oiled) over medium-high heat; close lid and cook, turning once, until no longer pink inside, about 10 minutes.
Slice toppings on a plate and place in the fridge so they are ready to go.
Place two pieces of lettuce as the base of the burger. Add the patty and toppings. You can wrap the lettuce and eat the burger with your hands (make sure you have napkins as this can get messy) or use a knife and fork. This is a satisfying way to enjoy a burger without the grains!
