Lemony Arugula Salad:

This was inspired during strawberry season for a light salad to serve with BBQ burgers.  It's sweet, tart and fresh!  It's a twist on an old spinach/strawberry classic.


Lemony Arugula Salad:
1 clam shell arugula or spinach
1 handful mint
1/2 pint of strawberries
1/2 red onion
1 lemon (zest)

Dressing:
2 lemons
1/4 cup EVOO
2 Tbsp. vinegar (apple cider or red wine vinegar)
1 Tbsp. honey
pinch of salt
*Shake well


Step #1: Empty the clam shell of arugula in a bowl

 
Step# 2  Slice Strawberries, onion and chop mint.  Add to the salad.  Grate zest of one lemon over salad.
 To make the Dressing:  Squeeze the lemons into a mason jar.  Add oil, vinegar and salt. 
 

Shake and add to salad just before serving. 

Enjoy this salad with BBQ meat or burgers!
