Chickpea Peanut Butter Chocolate Chip Cookie Dough Bites




 I was recently went up North in the Yukon to visit my sister and nieces.  It was a change of pace being woken up at 6am for stories by my 2 and 4 year old nieces!  I had a wonderful visit full of reading stories, playing princess and fairies and making food.  My sister sent a facebook recipe which is where I got the idea for these chickpea cookies!   These are delicious raw or cooked. I actually prefer them raw but try and do half and half.

Chickpea Peanut Butter Chocolate Chip Cookie Dough Bites:

Ingredients:
1 1/4 cups chickpeas
2 teaspoons vanilla extract 1/2 cup natural peanut butter (heaping) pinch of salt (if pb is unsalted)
1/4 cup honey, agave or maple syrup
1 teaspoon baking powder
1/2 cup dark chocolate chips or carob chips
1/4 cup chopped walnuts (optional)

Preheat your oven to 350°F. 


Step #1:  In a food processor Combine all the ingredients (except for the chocolate chips) in a food processor and process until very smooth. You may have to add a tiny bit of water until the mixture clumps into a giant ball (add only a very small amount at a time). 
 

Step #2  Stir (or use hands) to mix in Chocolate chips and nuts



Step #3  Roll all the dough into 1 inch balls.



Step #4

Raw: Eat them just like that as cookie dough bites.

Cooked: Place on a cookie sheet (lined with parchment paper for easy clean up!) and gently press a fork to make marks. Bake for approximately 8-10 minutes. They are delicious when the chocolate is still warm!







*The cooked ones are best while warm!  My nieces also took the leftover for lunches

    I love this recipe. I added about a half cup of rolled oats and just a little more peanut butter to help with the additional dried ingredient. They are great and my little one loves them.

  8. Had to add coconut flour to these Benny, maybe our chickpeas here in Africa are softer or the agave syrup is thinner.

  9. Your dough looks more dry then mine. My dough is VERY sticky and wet... I may add some type of flour to mine like Gita did before putting them in the oven.... Hmmmm ???

  10. I added 2 tablespoons of coconut flour to my mixture as mine was VERY wet and sticky. It helped with the consistency a lot. Taste wise... I LIKE IT!

  11. Chilling the dough in the fridge really helps to make it more firm and less sticky! I found it much easier to work with after it was chilled :)

  12. OMG sooooo good! You can't tell at all that they are made with beans! My dad is really picky and won't try anything new or strange if he is aware that it might be different. I offered him a bite of one of them and he liked them so much he stole my sister's ones! I didn't want to spoil it by telling him they were made with beans. Haha. My new go to peanut butter (chocolate chip) cookie recipe for sure. Thank you! :D
