Zucchini Spaghetti and Sundried Tomato Turkey Meatballs:

I bought a veggie spiral tool last year that is awesome!  I love making pasta out of zucchini.  This is a quick and easy meal that is satisfying.  A lovely bowl of "pasta" and meatballs. Yum!  The only tricky part to this meal is timing.



Zucchini spaghetti and sundried tomato turkey meatballs:

3 medium/small zucchinis (straight as possible)
1 can of tomatoes sauce
1 tsp olive oil
1 garlic clove chopped
Fresh Parmesan cheese to grate over pasta

Meatballs:
ground turkey (approx 250 grams)
1 Tbsp ground flax
1 egg
1 Tbsp chopped sun dried tomatoes
1 Tbsp chopped fresh or dried basil
Salt and pepper to taste
1 - 2 tsp olive oil (for cooking meatballs)

Step #1
Use veggie spiral machine to make zucchini noodles.  Set aside until meatballs are cooked.

Helpful hints: Try and find straight zucchinis. Start spiralling in the centre of the zucchini and cut noodles every so often or else they will get too long (lady of the tramp style).

Empty pasta sauce into a pot and turn on low (turn to medium when the rest of the meal is almost done)

Mix all meatball ingredient and form meatballs and set aside.  Heat olive oil on medium in a non stick pan.  Add meatballs and turn consistently for approximately 10 minutes.  When the first batch is done place on a pie plate in the oven to keep warm.  Start second batch and then cover with tin foil and keep warm in the oven.

Step #4
Heat olive oil on medium/high heat and add garlic.  After a minute add zucchini noodles.  I like to use bear claw salad servers to toss zucchini noodles to flash fry them.  I like to cook mine for approximately 7 minutes until lightly cooked. 

Step #5
Serve noodles, sauce and meatballs.  garnish with fresh basil and grated Parmesan
