This year I've discovered the magic of the Slow Cooker. You can make some very tasty meals and it's so nice to come home to the smell of dinner almost ready. Here is my recipe for pulled pork. I vary it slightly ever times and it always turns out delicious.. so feel free to experiment with spices and the sauce! Scott and I recently returned from Mexico and one of our favourite taco stands served pork and pineapple tacos that were incredible! I made these tacos last week to celebrate the engagement of my friends Wendy & Barclay. It is a fun meal...but gets messy!
- 1 pork roast (whatever cut is on sale!)
- 2 Tbsp dijon mustard
- 1 tsp olive oil (to coast pan)
Rub: *add whatever spices suit you.. this is what I use
-1 tsp cumin
-1 tsp pepper
-1 tsp curry powder
-1 tsp chipolte powder
-1 Tbsp onion powder
-1 Tbsp garlic powder
-1 Tbsp salt
-1 Tbsp paprika
Sauce:
- 2 cloves garlic
- 1 large tomato chopped
- 1 large onion chopped
- 1/2 cup chicken stock
- 1 tsp molasses
- 1/2 cup tomato sauce (BBQ sauce works too)
- 1 squeezed lime or orange (optional)
- 1 tsp chipotle paste (optional)
* 2 tsp arrowroot or cornstarch for sauce after meat is cooked!
Suggested Toppings:
- cilantro
- avocado
- fresh pineapple
- red onion
- grated carrot, red and green cabbage
- julienned jicima
- limes
- Greek yogurt (mixed with chipotle )
- salsa
1. Coat Pork Roast with Dijon mustard. Mix spices together and then rub on pork pork roast. Put in a bowl and cover with plastic wrap and place in the fridge overnight.
2. Heat olive oil on medium until warm. Add pork and sear each side until brown and then place in slow cooker. Add all sauce ingredient and leave slow cooker on low for 6-8 hours ( slow cookers vary in the heat they produce - the meat should fall apart easily.)
3. Transfer meat to a serving dish and pull apart with two forks. Use a hand blender to blend the sauce and arrowroot (it becomes a BBQ sauce). Add as much sauce as desired to the pulled pork (if you are not ready to eat - add meat back to slow cooker with desired sauce and keep on low).
