Basic Cauliflower "Rice"



Being grain free means being creative!  Cauliflower "Rice" is my new favourite thing!  You can substitute it for any recipe (cabbage rolls, burritos, curry, stir fry, risotto, fried rice).  Give it a try, you'll be amazed at how tasty this is (and healthy!) 

Basic Cauliflower "Rice": (approx 3 servings)
*double the recipe if you want to use the whole cauliflower and have left over "rice"

- 1 TBSP olive oil
- 2 TBSP chicken or vegetable broth (as needed)
- 1/2 head of cauliflower
- 1/2 onion (red or yellow)
- 1 clove of garlic (optional)
- spices (salt, pepper, cumin, curry, chili powder, garlic, ginger etc..)
*add spices as desired



You can use a cheese grater but it is much more efficient to use a food processor (use the cheese grater tool).  Cut Cauliflower length wise and feed into food processor and grate.    Cut onion into small pieces. 

 Heat oil on medium/high heat and add onion, cauliflower and spices. 


Stir constantly and add chicken or vegetable broth (as moisture is needed) until it turns golden brown (approximately 10 minutes depending on the heat)



Serve while warm with curry or stir fry.  Substitute for cooked rice in any recipe (cabbage rolls, burritos etc.)
