Summer Strawberry Avocado Mousse

 It was a beautiful summer's day and my friend Magda was coming over for dinner.  I had a bowl of ripe avocados to use up so I decided to make an avocado mousse.  I wanted to try something different so I made a Strawberry mousse pie with a walnut crust.
 
Chocolate Espresso Summer Strawberry Avocado Mousse Pie:
 Mousse
- 2 large avocados (4-5 small)
- 4-5 Tbsp. honey, agave or maple syrup (to taste)
- 1 tsp. espresso (optional)
- 1 tsp. vanilla
- 1/2 cup cocoa powder
- 1 cup Strawberries (for garnish)
- Dark chocolate (for garnish)

Crust
- 1 1/2 cup walnuts
- 2 Tbsp melted butter or coconut oil

Pulse walnuts and melted butter or coconut oil until it is coarsely ground.  Press into a small pie dish.  Bake at 350 degrees for approximately 10 minutes until brown. Set aside to cool (you can put it in the fridge to speed up the process).


Mousse
Step #1 In a food processor blend together  avocados, cocoa powder, espresso and maple syrup (please add more espresso and maple syrup to desired taste).  The mousse should be smooth.  If needed add 1/2 tsp. of water or coconut milk  to help make smooth (depending on how ripe the avocados are sometimes they require a little liquid to blend). 



Step #2  Add avocado mousse mixture to the walnut crust (when cool).  Garnish with slice strawberries and then use a vegetable peeler for the chocolate curls on top.  Refrigerate for at least 10 minutes or until served.
