Ingredients:

2 cups
grated cauliflower- ½ can coconut milk
- 1 Tbsp coconut sugar (cane sugar, white sugar or honey)
- 1 ripe mango
- 1 – 2 tsp coconut oil
- ¼ cup toasted unsweetened grated coconut
Step #2 Using a food processor, grate 1/3 head of cauliflower (I grate the whole thing and refrigerate the rest for a few days to use in other recipes).
Step #1 Heat coconut oil in a pan until melted. Add grated cauliflower and sauté at just above medium until cooked and starting to brown. Add coconut milk and sugar and turn heat to medium/high until it starts to bubble.
Step #2 Remove from heat and dish into small bowls. Drizzle with coconut milk, add mango slices and toasted coconut milk.
