Antioxidant Parfait

One of my all time favourite breakfasts since starting to eat clean and cut out refined sugars is Greek yogurt, berries and seeds.  I make it the night before and take it to work, and it's very filling.  My nieces love berries so for a kid friendly brunch idea I made them these healthy parfaits in fancy glasses and they loved them.  Now, when I'm feeling like a treat or sitting down and really enjoying my favourite breakfast I make the parfait in a fancy glass. Give it a try.  I mix it up with fruit that are in season or on sale. My friend Krista gave me the idea of pomegranate seeds back in the Fall and it is now my new favourite combined with blueberries.  Not only are these naturally sweet, they are also a rich source of antioxidents believed to prevent cancer and heart disease. Berries are on the 5 best antioxidant-rich foods list in a Canadian Living article.  To add fiber and crunch I use a combination of seeds such as pumpkin, sunflower, chia, flax and hemp hearts to add some fiber and texture to the parfait.

Antioxidant Parfait:
(1 large serving or 2 smaller servings)
- 1 cup plain Greek yogurt
- 1 tsp. vanilla (optional)
- 1 cup berries such as blueberries, raspberries, pomegranate seeds)
- 1 -2 Tbsp. pumpkin seeds (sunflower, flax, chia, or hemp hearts)

Step #1:
Stir 1 cup of Greek yogurt with vanilla until smooth

Step # 2
Deseed pomegranate and wash berries in preparation of making parfait layers

Step #3
Mix together seeds (I buy them in bulk and have them mixed and ready to go in a mason jar)

Step #4
Add layers of yogurt, berries and seeds to a fancy glass such as wine or martini glass, Champagne flute or mason jar.
