Adam's Eggs

Now that Christmas indulgence is over, I am back to cutting out sugars and all grains. It is simple, nutritious, delicious and it's my new favourite way to start the day.  I have been inspired by the talented Adam Fallon, who makes the world's most amazing eggs.   Check out his talent at https://soundcloud.com/adamfallon and look out for his upcoming shows!  This is my own version as Adam has not shared all his secrets.    Use whatever seasonal  fruit you can get your hands on to slice on the plate and garnish the eggs with avocado to give it a rich flavour. 
 
Adam's Eggs:
- 1 egg
- 2 egg whites
- 1 -2 tsp flax seeds
- herbs and spices (whatever you like or just salt and pepper)
- oil or butter
- 1/2 small avocado
*Seasonal Fruit
*My secret is using a good small/medium sized pan
 
Step #1 Garnish plate with fresh slices of pineapple, oranges, strawberries or whatever seasonal fruit you have.  
 
Step #2 Heat pan just past medium (in a small pan).  Spray with oil or add a tiny bit of butter to coat the pan. 
 
Step #2 Crack the egg into pan, add egg whites . *If desired break the yoke but I prefer to keep it whole and cook until medium hard to get the creamy texture).  Add flax seeds and spices.  Cook until it's brown underneath and then fold in half or thirds (like an omelette).  Cook for another minute.  Press on yolk until it is medium soft (or whatever you prefer).
 
Step # 4 Garish with slices of avocado
