This recipe was inspired by tomato season. I wanted a nice light and flavourful pasta dinner. I love the spice of the chorizo sausage, creamy artichokes and freshness of the tomato and basil!
Ingredients:
- 3 medium zucchinis
- 1 small jar artichokes
- 3 small tomatoes
- 4 chorizo sausages
- 2 Tbsp. olive oil
- 2-3 garlic cloves
- handful of fresh basil
- salt and pepper to taste
- Parmesan cheese (to garnish)

Step #1 Grill or fry chorizo sausage. Set aside and when they are cool enough slice or chop depending on personal preference.
Step #2 Use veggie spiral machine to make zucchini noodles. Set aside
Step #3 Dice tomatoes, chop basil and drain artichokes

Heat olive oil on medium/high heat and add garlic. After a minute add zucchini noodles for approx. 5 minutes I like to use bear claw salad servers to toss zucchini noodles to flash fry them. I like to heat mine for approximately 5-7 minutes until lightly cooked.
Step#5
Turn off the pan that is cooking the zucchini and add all the ingredients (chorizo, tomatoes, artichokes and basil) Toss on medium/high heat until warm.
Step #6
Serve pasta in a rustic dish. Garnish with fresh basil and grated Parmesan
