Vegan Dark Chocolate Pots de Crème:

This was the first Paleo treat I was introduced to by my friend Nicole.  I had a bite after not eating sugar for 8 weeks and just about melted.  I think this was the recipe that had me realize that is a lifestyle that is sustainable for me as I can still indulge for special occasions.  Thank you Nicole Buchanan!! 

This dessert will rock your world.. and it's so simple!  I'm not known for my baking and even I can't seem to screw it up!  It's an awesome hit of chocolate after a nice dinner or brunch.  They are decadent, smooth and rich so we like to make them in small shot glasses or tea cups.    We have also experimented with adding flavours like espresso, Irish Cream, orange, or infusing chili.   They are all good but favourite adding a dash of espresso powder to give it a richness.


Vegan Dark Chocolate Pots de Crème:

Ingredients:
- 2 dark chocolate bars (we use lindt, but other brands work as well - if anything more chocolate is better)
- 1 can coconut milk (*must be < coconut, check the label and try Fairways.  If it's more water based it won't set as well)
- Sea salt (to garnish.. don't forget!)

Optional:
*To change the flavour try adding one of the following flavours
- 1 tsp espresso powder
- 2 tsp Irish Cream
- Orange zest
- infused hot chili (infuse to chocolate liquid)
- vanilla bean or pure vanilla

 Such simple ingredients .. this is my kind of dessert!


1. In a Sauce pan pour coconut milk and break in dark chocolate bars on medium heat.  Stir constantly until the chocolate is melted.  Add flavour of your choice. 

2.  Pour into shot glasses or dishes and cool on the counter until room temperature (or at least 10 mins)

3. Chill in fridge overnight (make ahead and last for a few days)

4. Garnish with cracked sea salt, and berries

Don't forget the Sea Salt... it makes them Divine!

Get creative with the presentation with different dishes and garnish!
